Born on December 9, 1975, in Dakar (Senegal), Alexandre Couillon is a French chef based in the Vendée region. Renowned for his mastery of seafood, he was one of the first chefs to use the ikejime technique in France, notably following a trip to Japan alongside chef Toru Okuda. In 2017, he was named Chef of the Year by the Gault & Millau guide, after previously being recognized as “Grand Chef of Tomorrow” by the guide in 2008. Together with his wife Céline, he runs the restaurant La Marine in Noirmoutier, which has held three Michelin stars since March 2023.
