Maxence Barbot is a French pastry chef from Brittany, renowned for his technical rigor and contemporary approach to fine dessert cuisine. Trained in prestigious establishments such as Plaza Athénée and Four Seasons George V, he developed early on a precise and elegant signature focused on balance of flavors. Runner-up in the French Dessert Championship in 2013, he quickly established himself as a rising talent in French pastry. In 2019, he took over as Head of Pastry at Shangri-La Paris, where he asserted a style combining controlled creativity with a modern interpretation of classics. In May 2025, he was appointed Executive Pastry Chef at Le Bristol Paris, confirming his position among the influential figures of the new generation of pastry chefs.
